Caprese Chicken Nachos

So. Unbelievably. Cheesy.

  • 1 baguette, thinly sliced
  • Extra-virgin olive oil, for drizzling
  • 1 tsp. Italian seasoning
  • kosher salt
  • 2 c. shredded mozzarella
  • 2 c. Shredded chicken
  • 1 c. diced tomatoes
  • 1 tbsp. Freshly Chopped Basil
  • Balsamic glaze, for drizzling

  1.  Heat oven to 400°. In a large skillet, add a layer of baguette slices. Drizzle with olive oil and season with Italian seasoning and salt. 2.Top with a layer of mozzarella, shredded chicken, tomatoes, basil, and a drizzle of balsamic glaze.
  2.  Repeat one more layer, ending on tomatoes.
  3. Bake until the bread is toasted and cheese is melty, 15 to 20 minutes (cover with aluminum foil if bread gets too browned).
  4.  Garnish with remaining basil, drizzle with balsamic glaze and serve.
