Salmon BLT Salad

A salad so flavorful and satisfying you'll forget it all started with lettuce. The combination of salmon, bacon, and avocado is unbelievable and the homemade creamy dressing completes the whole dish!
TOTAL TIME: PREP: LEVEL: EASY   SERVES: 4

INGREDIENTS
  • FOR THE SALAD
2 6-oz. salmon fillets1/4 tsp. kosher salt1/4 tsp. Freshly ground black pepper10 c. chopped romaine2 c. cherry tomatoes, halved2 c. croutons1 avocado, halved, peeled, and diced6 slices cooked bacon, chopped
  • FOR THE DRESSING
1/3 c. mayonnaise1/2 c. plain Greek yogurtJuice of 1 lemon2 cloves garlic, minced1 tsp. white wine vinegar1 tsp. honey
DIRECTIONS
  1.  reheat oven to 400°. Place salmon on a lined baking sheet and sprinkle evenly with salt and pepper. Bake until browned and crispy on the edges, 18 to 20 minutes. Remove from the oven and let cool.
  2. Toss lettuce, tomatoes, croutons, avocado, and bacon together. Whisk all of the dressing ingredients together and season with salt and pepper.
  3.  Chop up salmon and toss into salad along with the dressing. Serve immediately.
